Recipe Ingredients for Stuffed Shells Florentine

1 tbl low-fat margarine
6 oz mushrooms, coarsely chopped
3/4 cup onion, chopped
1 1/2 tbl garlic, minced
1 1/2 tsp Italian seasoning
3/8 tsp black pepper
24 oz fat free cottage cheese
15 oz (1-1/2 pkg) frozen chopped spinach, thawed & well-drained
3/4 cup Egg Beaters Health Real Egg Substitute
330 g (33 pieces) jumbo pasta shells, cooked in unsalted water & drained
15 1/4 oz reduced-sodium spaghetti sauce, divided

Recipe Directions for Stuffed Shells Florentine

  1. Pre-heat oven to 350-degrees.

  2. In large skillet, over medium-high heat, saute mushrooms, onion, garlic, Italian seasoning and pepper in margarine until tender.

  3. Remove from heat; stir in cottage cheese, spinach, and Egg Beaters.

  4. Spoon mixture into prepared shells.

  5. Spread 1/2 cup spaghetti sauce in bottom of 13 X 9 X 2-inch baking dish; arrange shells over sauce. top with remaining sauce; cover and bake for 35 minutes or until hot.

  6. Each shell has 67 calories; serves up to 8 people.
