Recipe Ingredients for Stuffed Shells Florentine

243 g (30 pieces) jumbo pasta shells, cooked in unsalted water & drained
1 1/2 tbl low fat margarine
4 oz mushrooms, coarsely chopped
3/4 cup onion, chopped
1 1/2 tsp garlic, minced
1 1/2 tsp Italian seasoning
3/8 tsp black pepper
24 oz fat free cottage cheese
15 oz (1 pkg) frozen chopped spinach, thawed & well-drained
3/4 cup Egg Beaters Health Real Egg Substitute
1/4 cup seasoned bread crumbs
15 1/4 oz reduced-sodium spaghetti sauce, divided

Recipe Directions for Stuffed Shells Florentine

  1. Prepare shells according to package direction; set aside.

  2. Meanwhile, in large skillet, melt margarine and add mushrooms, onion, garlic, Italian seasoning, and pepper. Cook until vegetables are tender. Remove from heat.

  3. Add cottage cheese, spinach, Egg Beaters, and bread crumbs. Stir until well blended.

  4. Pour 1/2 cup spaghetti sauce in 13 X 9 X 2 inch baking dish.

  5. Stuff shells and place in baking dish. Cover with remainder of sauce. Cover and cook in 350-degree oven for 35 minutes or until bubbly.
