4 oz Peppers
1.5 cup Rice, Brown, Medium-grain, Cooked
0.5 cup Corn, Sweet, Yellow
2 serving Extra Virgin Olive Oil
1 medium raw Onion Red
0.5 cup, chopped or diced Chicken, Meat Only, Roasted
0.25 cup Shredded Mozzarella

Recipe Directions for Stuffed Roast Peppers

fry onion in oil, add to other dry ingredients. Boil peppers for a few minutes to soften, spoon in mixture and roast for 35 minutes after topping with cheese.
