Easy and fast to make. No preboiling of peppers, They cook in a pot on a stovetop in jarred tomato sauce, or your own if you prefer... You can substitute ground pork for other ground meats for even less calories and fat.

Recipe Ingredients for Stuffed Red Peppers (stove top)

6 red Peppers
2 tbsp. Olive Oil
1 onion (chopped)
2 tbsp parsley (dry)
3 cloves garlic (chopped)
1 cup brown rice
1 tbsp. Paprika
1 1/4 tsp. salt
1/2 tsp. pepper
1/4 tsp. Allspice
2 1/2 cup Tomato sauce
1 lb. Ground Pork
1 egg

Recipe Directions for Stuffed Red Peppers (stove top)

  1. Cook 1 cup brown rice in 2 1/2 cup of water in the microwave for 12-15 minutes til tender.

  2. Cut off tops of peppers. Discard seeds and chop tops. Set aside.

  3. Heat oil in a large skillet.

  4. Add onions and saute for about 4 minutes.

  5. Add peppers, garlic and seasonnings, saute for about 4 minutes.

  6. Add ground pork and cook till browned, about 10 minutes. Add only 3/4 cup of the tomato sauce, the cooked rice and the egg. Mix well. Set aside.

  7. In a large pot, pour rest of tomato sauce.

  8. Fill pepper cavities with meat mixture.

  9. Place 6 peppers standing side by side on top of the tomato sauce in the pot.

  10. Bring to a gentle boil. Cover and simmer for 40 minutes basting with sauce after 20 minutes.
