Recipe Ingredients for Stuffed red peppers

4 red peppers
300 g tomatoes
8 anchovies
1 tbsp olive oil
2 cloves garlic

Recipe Directions for Stuffed red peppers

  1. Preheat oven to 200*c.

  2. Halve peppers through the stalk. Remove seeds and membrane. Arrange in an oven proof dish.

  3. Peel and de-seed tomatoes (use tinned unless the fresh are REALLY good - a whole tin of whole plum tomatoes). Cut ito large pieces and divide between tomatoes.

  4. Slice anchovies down the midle lengthwise and criss cross over the tomatoes. Add garlic and drizzle over oil. Season with black pepper.

  5. Roast for 20 - 30 minutes til charred and softened.
