Brown rice, chicken or chicken sausage, kalamata olives, feta cheese, and of course basil and feta...all my favorites

Recipe Ingredients for Stuffed Red Peppers

1 cup brown rice
1 cup chicken
3 red peppers
3/4 cup feta cheese
12 kalamata olives
1/3 cup red onion
1 teaspoon dry basil
1 tablespoon garlic

Recipe Directions for Stuffed Red Peppers

  1. crack hulls of brown rice in hot cast iron skillet, stirring constantly.

  2. Add 2 cups water and 2 teaspoons chicken bullion and bake at 350 degree oven for 1/2 hour, or until all water is absorbed.

  3. Using cooked chicken, or browned chicken sausage, chop and and mix with rice. Add seasonings.

  4. Chop onions, and olives. Add to rice mixture along with 1/2 cheese.

  5. Halve peppers and remove seeds. Spoon rice mixture into each half, whatever doesn't fit in peppers put in bottom of casserole and place peppers on top. Sprinkle the rest of cheese on top.

  6. Cover with lid and bake at 350 degrees for 20 minutes, or until peppers are cooked.
