Recipe Ingredients for Stuffed Red peppers

2 (large) sweet red peppers
1 (medium) onion
4 tbsp tomato puree
1 tbsp garlic
8 (small) mushrooms, fresh
1 tbsp olive oil
1 large carrot

Recipe Directions for Stuffed Red peppers

  1. halve and deseed the peppers

  2. chop all the other veg, and sweat in heavy pan over medium heat in half the olive oil

  3. add the puree, mix and cook until veg are tender

  4. add a dash of water if too dry

  5. pack mix into pepper halves

  6. (alt: reserve the mushrooms, halve and pack on top before roasting, with a brush of oil over them)

  7. roast for 30 mins at mod to hot heat
