I "doctored" one of my favorite recipes, to get more bang for the buck! :)

Recipe Ingredients for Stuffed Rainbow Swiss Chard

1450 gram Swiss Chard
1/2 cup rice, cooked
1 lb ground beef 92%
1 medium onion, finely chopped
1/4 cup parsley, minced
2 teaspoons oregano leaves
1 teaspoon cumin
1/2 teaspoon ground allspice
1 tsp salt
1/2 tsp garlic powder
1 green pepper, diced
3 Roma tomatoes, diced
2 tablespoons extra virgin olive oil

Recipe Directions for Stuffed Rainbow Swiss Chard

  1. Chop the stems from the Swiss Chard very fine and add to the ground beef and cooked rice. Steam the chard leaves for 5 minutes, cool in ice water and drain off any excess water.

  2. Add the spices to the ground meat, along with the chopped stems and diced onion.

  3. fill the chard leaves and place into a large casserole.

  4. Chop the green pepper and Roma tomatoes and sprinkle over the chard rolls. drizzle with the olive oil.

  5. Cover with foil and place into a reheated oven.

  6. Bake at 350F for 90 minutes, or until rolls are tender.

  7. Serve with Yogurt, if desired, or with a fresh salad.
