Thanksgiving side dish or whenever.

Recipe Ingredients for Stuffed Pumpkin

2 cups pumpkin (half of a small pumpkin)
4 slices bacon, cooked & crumbled
1 slice whole wheat bread, cubed
1/8 cup onion
2 cloves garlic
1/2 cup spinach
1/4 cup smoked cheddar cheese
2 tablespoons asiago cheese
3 1/2 tablespoons heavy whipping cream

Recipe Directions for Stuffed Pumpkin

  1. Heat oven to 450 F.

  2. Slice a small pumpkin in half. Scoop out seeds and strings. Place in a small dutch oven/skillet.

  3. Mix remaining ingredients together. Stuff into center of pumpkin.

  4. Cover loosely with foil.

  5. Bake for 45 minutes, or until pumpkin is tender. Uncover and bake for 10-15 minutes more or until top is browned.
