Stuffed Pumpkin Recipe

Surprisingly simple autumn or halloween dinner.

Recipe Ingredients for Stuffed pumpkin

10 cups pumpkin, raw
3 mushrooms, large
3 onions
3 cloves garlic
3 tomatoes
1 salt
1 pepper
1 tbsp olive oil
10 g butter
300 g beans, cooked
1 pinch chili

Recipe Directions for Stuffed pumpkin

  1. Hollow out large whole pumpkin.

  2. Saute pumpkin flesh with other vegetables, oil and butter over gentle heat until soft.

  3. Add can of chili beans or baked beans.

  4. Season to taste.

  5. Fill the empty pumpkin shell and place in hot oven for 30-60 minutes until done to taste.
