Twice baked potatos stuffed with chicken, spinach and mushrooms

Recipe Ingredients for Stuffed Potatos

2 large baking potatos, with salt
4 tbsp Bundle Light Buttery Spread
2 cloves garlic
3/4 cup white mushrooms
3/4 cup baby spinach, shredded
1/4 tsp ground black pepper
1/4 tsp sea salt
8 oz Chicken Breast Tenderloins
1/4 cup Finely Shredded Cheese
1/4 cup 2% milk

Recipe Directions for Stuffed Potatos

  1. Bake potatos at 400 for 45 minutes

  2. Cut in half, scoop out insides, mash with butter, milk, salt and pepper

  3. Sautee chicken, spinach, mushrooms and garlic in evoo and stir with potato mixture

  4. Refill scopped out shells and top with shredded cheese

  5. Pop back in oven for 10 minutes
