Recipe Ingredients for stuffed potatoes

6 medium potatoes
1 cup chopped almonds
6 tbsp raisins
2 chili peppers
1/4 cup olive oil
1 onion
2 cloves garlic
3 tomatoes
1 tsp cumin
1 tsp turmeric
1/3 cup plain nonfat yogurt
1 cup water

Recipe Directions for stuffed potatoes

  1. Oven - 350. Bake potatoes 50 min.

  2. Cut in half and scoop out flesh. mash in a bowl and add nuts, raisins, and chilis. Mix well and stuff back into potatoes.

  3. Heat oil. Saute onion and garlic until transparent. Add tomatoes and spices and simmer until oil separates - 15 min. Add yogurt, water, and salt and cook 5 min. Add potatoes and simer 5 min. Serve hot.
