1 cup cottage cheese
3 tbsp lowfat milk
1/3 cup parmesan, grated
1 cup mozzarella
2 scallions

  1. bake potatoes

  2. scoop out insides

  3. blend cottage cheese and milk

  4. after blending, stir in parmesan, diced mozzarella, scallions and pepper

  5. mash potatoes and stir in cheese mixture

  6. stuff potatoes and bake 20 minutes
