Recipe Ingredients for Stuffed portobello mushrooms

10 oz diced turkey
3 garlic cloves
1 tablespoon balsamic vinegar
2 tablespoons olive oil
3 slices whole wheat bread
1/4 cup parsley
1/4 cup basil
1/4 cup feta cheese

Recipe Directions for Stuffed portobello mushrooms

  1. Preheat Broiler.

  2. Scrape out mushroom gills and remove stem. Whisk together garlic, vinegar and half the oil. pour over mushrooms, turning to coat. Place on cookie sheet and cook for 10 minutes, brush remaining garlic mix on mushrooms every couple minutes.

  3. While mushrooms are cooking, maybe even before due to time. Shred bread till you have 1 cup of crumbs, combine with finely chopped parsley, basil and remaining olive oil.

  4. Remove mushrooms from oven and sprinkle each one with salt and pepper. add 1 tablespoon of feta cheese to each mushroom, place in oven till melted, about one minute.

  5. Remove from oven and spread 1/4 cup of bread crumb mix in each mushroom, broil till brown on top, about 2 minutes. Serve immediately.
