Recipe Ingredients for stuffed portabello caps

12 cap Mushrooms Portabella Caps
0.25 cup Quinoa
1 cup Rice, Brown, Medium-grain, Cooked
0.13 cup Pine Nuts, Pignolia, Dried
5 tbsp chopped Shallots

Recipe Directions for stuffed portabello caps

  1. saute shallots in olive oil

  2. Add rice and continue to saute

  3. add Quenia

  4. Add remaining ingreditents

  5. Add 1 cup of hot water - cover simmer until rice is cooked.

  6. Stuff Mushrooms w/ filling

  7. Bake 350 for 15 minutes or until portabello is soft
