Recipe Ingredients for Stuffed Portabella Mushrooms

6 oz portabella mushrooms (2 large, whole)
1/4 c bread crumbs
1/4 c Parmesan cheese, grated
1/4 c olive oil
1 clove garlic, pressed
2 T radicchio or chicory, chiffonade

Recipe Directions for Stuffed Portabella Mushrooms

  1. Crush garlic clove into olive oil & leave sitting together.

  2. Brush dirt from mushrooms and remove the stems.

  3. Chop up the stems & place in bowl with bread crumbs, cheese, and greens.

  4. Brush top side of mushrooms with the oil & broil for about 3 minutes.

  5. Flip mushrooms gill side up, brush with oil and broil for another 3 minutes & remove from oven.

  6. Mix oil & garlic into the stuffing, adding a little bit of oil if needed to make it clump together slightly.

  7. Fill mushrooms with stuffing & broil until golden (3-5 minutes)
