Recipe Ingredients for Stuffed Porkchops

678 g (6) boneless porkchops, pounded 1/4 inch
1 sweet red pepper, chopped
1/4 cup onion, finely chopped
1 garlic clove
2 tsp olive oil
8 oz stuffing dry mix
1/2 cup frozen corn, thawed
4 oz chilies, chopped
4 oz mushrooms, chopped
1/2 cup part-skim mozzarella cheese, shredded
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Stuffed Porkchops

  1. In a large skillet coasted with non-stick spray, saute red pepper, onion, and garlic until tender. Stir in bread cubes, chillies, mushrooms and corn; cook 2 minutes longer. Transfer to a bowl; stir in cheese.

  2. Using a tenderizer, cut butterfly pork chop in half and tenderize until 1/4 inch thickness. Fill center with mixture securing with toothpicks. Sprinkle chops with salt and pepper.

  3. Bake in oven at 375 for 35 minutes. Discard toothpicks before serving.
