Recipe Ingredients for Stuffed Pork Tenderloin

0.25 cup Chicken Broth
0.25 cup (not packed) Raisins, Seedless
1 medium (2-1/2" dia) (approx 4 per lb) Peaches
1 stalk, medium (7-1/2" - 8" long) Celery
3 tbsp chopped Onions
3 oz Classic Caesar Croutons
28 2/5 grams Pecans
16 oz Pork, Fresh, Loin, Tenderloin

Recipe Directions for Stuffed Pork Tenderloin

  1. Boil broth and add raisins. Remove from heat.

  2. Saute peach, celery, onion until tender. Add garlic, and saute for another minute or so.

  3. Remove from heat. Add broth and raisins, croutons, and nuts.

  4. Salt and pepper to taste.

  5. Cut slit down the middle of the pork loin to within 1/2 inch of bottom. Wrap and flatten to within 1/2 inch thick. Fill with stuffing mix. Wrap, secure with kitchen string and toothpicks.

  6. Back at 425 for 25-30 minutes. Let stand for 5 minutes before slicing.
