Recipe Ingredients for Stuffed Pork Tenderloin

3/4 pound pork tenderloin
1/2 cup onion, chopped
2 tbsp. butter
1 cup bread crumbs, soft
1/4 cup parsley, minced
1/4 tsp. sage
1/4 tsp. rosemary, crushed
1/4 tsp. salt
1/8 tsp. pepper
1 egg
6 grams bacon

Recipe Directions for Stuffed Pork Tenderloin

  1. make lengthwise slit in tenderloin about 3/4 way through, open and lie flat. Flatten with mallet to 1/4 inch thick.set aside.

  2. saute onion in butter til tender. add breadcrumbs; saute til golden. remove from heat and stir in parsley, sage rosemary, salt, pepper and enough egg to moisten.

  3. spread stuffing on one long side of loin. close meat and place bacon on top. tie with kitchen string and place in rosting pan. bake uncovered at 425 F for 35 mins. let stand 10 minutes before slicing into medallions.
