Recipe Ingredients for Stuffed Pork Loin in a Wine and Cream Sauce

20 oz Always Tender Pork Center Cut Loin Filet
0.75 cup Asparagus
1 slices Bacon
0.2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.25 oz Extra Virgin Olive Oil
2 serving Cooking Wine
1/2 tbsp Minced Garlic
2 slice Sliced Cheese
2 serving Cooking Wine
1 tbsp Minced Garlic

Recipe Directions for Stuffed Pork Loin in a Wine and Cream Sauce

  1. With a tenderizer or or the heel of your hand, from the center out in all directions pound out the loin until it is approximately 1/4" thick.

  2. In a small skillet sear the bacon until it begins to brown, deglase the pan with a splash of white cooking wine. After a minute add a tbsp of minced garlic. A minute or so later add the asparagus tips and tomatoes.

  3. After another minute or so add 1/4 cup of white wine. Allow the mixture to steam for a minute or so and then remove from the heat (asparagus tips whould be heated and aldente).

  4. On one end of the loin place the two cheese slices side-by-side, and then spoon on the asparagus mixture coating 1/2-2/3's of the loin. Roll the loin as tightly as possible from the cheese end.

  5. lighly pat the loin with a pork rub (a tbsp at most).

  6. Heat a stainless steel or cast iron shillet on high that can be put in the oven to finish the loin. When hot add a tbsp of olive oil. As soon as the olive oil starts to smoke add the loin and sear it on all sides. After the loin sits on its last flip for 30 seconds or so, add 1/2 cup of white wine and move the loin to the oven.

  7. Bake for 18 minutes basting twice with the wine over the baking time. When finshed remove from the oven and move the loin to a serving dish to rest. Deglase the pan with 1/4 white cooking wine. When the wine browns from the drippings add 1 tsp garlic and after 1 minute add 1 tbsp butter. After the butter melts add 1/4 heavy whipping cream and reduce heat to meadium. simmer until it thickens slightly, then pour over the loin.

  8. After 2-3 minutes with a very sharp or electric knife, slice into six servings. Spoon 1 tbsp of the sauce from the dish over each serving of loin.
