Recipe Ingredients for Stuffed Pork Chops

4 chop, excluding refuse (yield from 1 raw chop, with refuse, weighing 151 g) Pork, Fresh, Loin, Sirloin (Chops), Bone-in

SAUCE:
4 tbsp Butter
3/4 cup, pieces or slices Mushrooms
0.13 cup, chopped Peppers, Sweet, Red
0.13 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1/4 cup, chopped Onions
1/4 cup Gold Medal All Purpose Flour
2 1/2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1/2 cup, shredded Cheddar Cheese

SUFFING:
8 slice Bread, Whole-wheat, Commercially Prepared
1/4 cup, chopped Onions
1/4 cup, diced Celery
1/4 cup, pieces or slices Mushrooms
1/4 cup, chopped Peppers, Sweet, Red
3 cloves Garlic
1/4 cup Parsley
1 tsp Thyme, Fresh
2 oz Beef Flavored Stock

TOPPING:
1/2 cup Bread Crumbs, Dry, Grated, Plain
1 tbsp Butter
1 dash Pepper, Black

Recipe Directions for Stuffed Pork Chops

  1. Prepare Stuffing: in medium pan, melt butter and saute onion, garlic, celery, peppers, and mushroom until veggies are soft.

  2. Stir in Parsley, thyme, salt and pepper as desired. mix well

  3. Cut bread into cubes, and toss with veggie mix.

  4. gradually add stock until bread cubes are barely mushy.

  5. Slice each pork chop to butterfly creating a pocket near the bone.

  6. Stuff 1/4 of stuffing into each and seal with toothpicks

  7. saute chops in 2tbsp of butter 5 mins on each side, until browned.

  8. remove and place in casserole dish

  9. Preheat oven to 350 degrees

  10. in saute pan, prepare the sauce., combine butter, and all veggies for Sauce and cook until translucent.

  11. lower heat to medium and sprinkle flour.

  12. cook, stirring constantly for about a minute.

  13. whisk in milk, stirring constantly until thickens heavier that heavy cream texture.

  14. remove from heat and add cheese and stir to melt.

  15. Pour Sauce onto chops in casserole dish.

  16. Combine dried bread crumbs with 1 tbsp melted butter, sprinkle on top of casserole dish.

  17. Bake for 25-30 minutes or until internal temp reaches 175 degrees. Remove and let stand for 10 minutes.
