Spicier version of stuffed peppers. Using the smaller, hotter cousin to the bell pepper.

Recipe Ingredients for Stuffed Poblanos

750 gram, Chopped Tomatoes in Puree
220 gram, Jalapeno Salsa
120 gram, Onion, diced
10 gram, Garlic, 3 cloves
439 gram, blackeye peas
80 gram, Corn Meal
80 gram, Pepper Jack Cheese, shredded
2 gram, Ground Cumin
400 gram, Poblano Peppers

Recipe Directions for Stuffed Poblanos

  1. Preheat oven to 425 degrees. In blender, combine tomatoes, jalapeno, half of the onions, and 2 whole garlic cloves; puree. Season with salt. Pour sauce into a 9 x 13 baking dish; set aside.

  2. in medium bowl, combine beans, cornmeal, 1/2 cup cheese, remaining onions, garlic clove (minced), cumin and 3/4 cup water; season w/ salt, pepper, other.

  3. Halve peppers; remove ribs and seeds. Stuff halves with bean mixture; place on top of sauce in baking dish.l Sprinkle poblanos with remaining 1/2 cup cheese; cover baking dish tightly with aluminum foil.

  4. Bake until peppers are tender; about 45 minutes. Uncover, and continue to cook until sauce thickens slightly and cheese is browned; 10 to 15 minutes more. Let cool for 15 minutes.
