A slightly spicy, protein packed stuffed pepper, with enough cheese to satisfy those cravings for authentic mexican food. I use Poblano's but couldn't find them in the CC database

Recipe Ingredients for Stuffed Poblano Peppers

2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 breast, bone and skin removed Chicken, Breast, Meat Only
2 piece Chorizo Sausage
4 tbsp Cheese Cream Light
4 tbsp Parmesan, Grated Cheese
2 slice (1 oz) Fontina Cheese

Recipe Directions for Stuffed Poblano Peppers

  1. 1. Quickly blanch the peppers in boiling water. Allow to cool slightly in covered bowl and remove skins. Slice in half length wise.

  2. 2. Mix shredded chicken breast with small diced chorizo, light cream cheese, and parmesan.

  3. 3. Stuff peppers with chicken mixture and cover in shredded fontina.

  4. 4. Bake at 325 for 20 minutes or until heated through and cheese is bubbly

  5. 5. Enjoy
