Very spicy stuffed Poblano peppers

Recipe Ingredients for Stuffed Poblano Peppers a la Marilyn

4 poblano peppers
2 tbsp olive oil
8 oz ground beef
1/2 onion, finely chopped
1 cup Rice, Brown, Long-grain, Cooked
1/4 cup tomato sauce
2 large eggs, lightly beaten
1 clove garlic, minced
1 tsp Basil, Dried
1/2 tsp red pepper flakes
2 oz pecorino, grated (oz)

Recipe Directions for Stuffed Poblano Peppers a la Marilyn

  1. Cut the peppers and half and remove some of the seeds, if desired

  2. Preheat oven to 375F

  3. Saute onions, ground beef in a skillet until the beef is lightly colored, about 10 minutes

  4. add cooked rice, tomato sauce, eggs, garlic and spices

  5. Stir to blend

  6. Fill the peppers with the meat mixture and place in baking dish

  7. Sprinkle with the grated pecorino

  8. Bake until peppers are tender and filling is browned, about 25 minutes
