Poblano peppers stuffed with ground turkey, cheese, tomatoes, and black beans

Recipe Ingredients for Stuffed Poblano Pepper

1 Poblano pepper
2 ounces ground turkey
1/2 ounce Mexican cheese
1/8 cup diced tomato
1/8 cup black beans
1 tsp dried cilantro

Recipe Directions for Stuffed Poblano Pepper

  1. Cut end off Poblano pepper and core

  2. Cook ground turkey in skillet with cilantro, tomatoes, and black beans.

  3. Stuff Poblano peppers alternatively with cheese and meat mixture in a casserole dish. Sprinkle remaining mixture on top.

  4. Cook at 350 degree for 20 minutes or until cheese is melted.
