Stuffed Peppers with Turkey and Vegetables

Recipe Ingredients for Stuffed Peppers with Turkey and Vegetables

4 green bell peppers, tops removed, seeded
1 lb. ground turkey meat
2 tbsp. olive oil
1/2 onion, chopped
1 cup mushrooms, sliced
1 zucchini, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 cup fresh spinach
14 1/2 oz diced tomatoes, drained
1 tbsp. tomato paste
1 Italian seasonings to taste
1 garlic salt to taste
1 salt and pepper to taste

Recipe Directions for Stuffed Peppers with Turkey and Vegetables

  1. Preheat oven to 350 degrees (175 degrees C)

  2. Wrap the green bell pepper in aluminum foil, and place in a baking dish. Bake 15 min. in the preheated oven. Remove from heat.

  3. In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to skillet. Mix tomatoes and tomato paste, and season with Italian seasonings, garlic powder, salt and pepper. Stuff green peppers with the turkey and vegetable mixture.

  4. Return peppers to the oven, and continue cooking 15 minutes.
