Bell peppers stuffed with Italian ground beef mixture, from Super Suppers cookbook.

Recipe Ingredients for Stuffed Peppers [Super Suppers] -- 300 cal/serving

3 large bell peppers, plus perhaps 2 more for chopping
28 oz. can tomatoes, undrained (whole, diced, crushed, whatever your preference)
1 cup finely chopped onion, divided
1 cup finely chopped bell pepper, divided
1 tablespoon tomato paste
1 teaspoon dried herbs, any Italian variety, crushed
1 teaspoon fresh minced garlic
2 pounds ground beef
1 cup finely crushed saltines
1 egg, beaten
1/2 cup tomato sauce
1 tablespoon Worcestershire sauce
1 1/2 teaspoons salt
1 teaspoon dried thyme, crushed
1/2 teaspoon black pepper

Recipe Directions for Stuffed Peppers [Super Suppers] -- 300 cal/serving

  1. In a medium saucepan, combine undrained diced tomatoes, 1/2 of the chopped onion and bell pepper, and the herbs, garlic, and tomato paste. Bring to boiling over medium heat, then reduce heat and simmer for about 20 minutes.

  2. While it simmers, preheat oven to 375F and coat a 9x13x2 baking dish with cooking spray. Cut bell peppers in half lengthwise and scoop out the seeds and membranes to make shallow bowls. Arrange them in the prepared dish.

  3. In a large bowl combine remaining onion and bell pepper, ground beef, crackers, egg, tomato sauce, Worcestershire sauce, salt, thyme, and black pepper. Use a fork or your hands to mix well. Stuff bell pepper shells with mixture, pressing it in and mounding it on top. (I had extra left over and made 2 meatballs.)

  4. Pour marinara mixture from saucepan over all. Bake, uncovered, about 45 minutes or until internal temperature reads 155F.
