Tweaked my usual fiesta stuffed peppers a little to make the meat go further (ended up with a little too much). Trying to cook them in them in the slow cooker for the first time...

Recipe Ingredients for Stuffed Peppers in the Slow Cooker

400 g ground chicken
1 1/2 cup cooked brown rice
1/2 cup pace salsa
1/2 cup corn
1/2 tsp chilli powder
1/4 tsp cumin
1/4 tsp garlic powder
1 dash salt
4 large red peppers
1 jalapeņo pepper

Recipe Directions for Stuffed Peppers in the Slow Cooker

  1. Mix everything other than the red peppers together in a bowl.

  2. Wash and clean out the peppers, save the tops.

  3. Stuff the peppers and put the tops back on.

  4. Arrange in the slow cooker with 2/3 cup water on the bottom.

  5. Cook on low for 6-8 hours.
