Green Peppers stuffed with sausage, tomatoes and rice

Recipe Ingredients for Stuffed Peppers with Sausage

4 green peppers
1 lb. pork sausage
1 small white onion
1/3 cup white rice
1/3 cup water
2 tbsp. worcestershire sauce
1 tsp. oregano
1/4 tsp. salt
1/4 tsp. ground black pepper
17 1/2 oz. tomatoes, petite diced (canned)
3/4 cup cheddar, finely shredded

Recipe Directions for Stuffed Peppers with Sausage

  1. Halve peppers lengthwise. Bring pot of salted water to a boil. Parboil peppers for 4 minutes. Remove from water, sprinkle with salt and then invert on papertowels to drain.

  2. In skillet, brown sausage. Add finely diced onion. Cook until onion browns (about 2 minutes). Add can of tomatoes (with liquid) and deglaze pan. Then add water, rice, worcestershire sauce, oregano, salt and black pepper. Cook until rice is tender (about 10 minutes) stirring often. If mixture appears too dry, add additional water (up to 1/4 cup more). Once rice is tender, stir in 1/2 cup of shredded cheddar.

  3. Put pepper halves in a greased 9x13 pan. Fill with sausage and rice mixture. Bake at 325 degrees for 15 minutes. Top with remaining cheddar and bake for 5 minutes more (or until cheese is melted).
