Stuffed Peppers from the Manganaro Italian Family Cookbook

Recipe Ingredients for stuffed peppers

6 red peppers
2 eggs
8 ounces hamburger
1 cup cooked rice
1 small onion
1/4 cup pine nuts
2 tbs parmesan cheese
1 tsp parsley
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basil

Recipe Directions for stuffed peppers

  1. Cut of tops of peppers and reserve

  2. Remove seeds and membranes from peppers

  3. Ina a mixing bowl stir together eggs, beef, rice, onions, nuts, Parmesan, parsley, salt, pepper, and basil

  4. Spoon meat mixture into peppers. Place tops on peppers and arrange in a shallow baking dish.

  5. Bake inb 375 degree F oven for 1 hour or until meat is done and peppers are tender
