Use yellow bell peppers for a real "southwest" feel to this dish. I've never made it with green ones because I, personally, don't like them. You don't have to use this many peppers. That's just what the filling will make up for. If you want fewer, use the filling inside tortillas for a great tasting burrito!

Recipe Ingredients for Stuffed Peppers

8 Bell Peppers
15 oz chicken thighs
1 onion
1 cup barley
1 1/2 cup White Shoepeg Corn
1 cup black beans
16 oz tomato sauce
1/4 cup shredded cheese

Recipe Directions for Stuffed Peppers

  1. Spray peppers with cooking spray and put under broiler.

  2. Char and turn until soft. 12 - 15 minutes

  3. Brown chicken and onion in 1 tbs olive oil

  4. Add all other ingredients - except cheese - with enough water to achieve a mushy consistency

  5. Cover and allow to steam for 5-10 minutes. Remove from heat.

  6. Fill peppers with filling. Top with 1 tbs of the shredded cheese.

  7. Broil on low until cheese melts.

  8. Serve hot OR cold. Delicious both ways!
