this isnt low cal, but still gives tons of fiber and veggies!!!

Recipe Ingredients for stuffed peppers

15 oz can corn
15 oz can black beans
16 oz ground venison
15 oz crushed tomatoes
3 oz pizza sauce
3 green peppers
1 package spanish rice

Recipe Directions for stuffed peppers

  1. brown venison (or hamburger) with a little onion and green pepper

  2. while browning meat, prepare spanish rice as indicated on package

  3. add tomatoes, black beans and corn to meat and mix

  4. put 1cm of water in the bottom of crock pot and turn on high

  5. fill meat mixture about 3/4 way up the pepper, and add rice to the top, add a little meat on top so it is just heaping

  6. cook on high in crockpot for 1.5 hours or until peppers are tender
