A good way of getting lots of veggies

Recipe Ingredients for Stuffed Peppers

3 Sweet Peppers
5 Mushrooms
1 Carrot
1 Onion
1 Tomato
1 Chunk of Ginger
2 cloves Garlic
2 tbsp Soy Sauce
1 tsp Olive Oil

Recipe Directions for Stuffed Peppers

  1. Put aside two of the peppers, preferably the largest two.

  2. Chop the remaining ingredients finely and fry in a little olive oil until soft.

  3. Add the soy sauce.

  4. Cut the two remaining peppers in half and fill with the cooked mixture.

  5. Bake in the oven until the peppers have softened
