Peppers stuffed with ground turkey and confetti brown rice

Recipe Ingredients for Stuffed Peppers

1/2 cup uncooked brown rice
1 medium Red Bell Pepper
1 medium Orange Hothouse Bell Pepper
1 medium Yellow Hothouse Bell Pepper
1/4 cup, diced Celery
1 cup Vegetable Stock
1 tbsp Unsalted Butter
1 serving kraft mexican authentic shredded cheese
1/2 lb Kroger ground turkey 93% lean

Recipe Directions for Stuffed Peppers

  1. Add rice to vegetable stock and bring to a rolling boil, reduce heat, cover and simmer according to package directions.

  2. Level bottoms of peppers and remove tops, cores and seeds. Reserve pepper flesh from tops.

  3. Lightly butter insides and outsides of peppers. Arrange in a baking dish and place in a 350 degree preheated oven.

  4. Mince reserved flesh from pepper tops and 1/2 celery stalk.

  5. Use remaining butter to brown turkey. Season turkey to taste.

  6. Once rice and turkey are cooked, stir together with minced peppers and celery and add shredded cheese.

  7. Remove peppers from oven and stuff with filling. Return to oven for additional 20 - 45 minutes depending on desired doneness of peppers.
