Red peppers stuffed with ratatouille and brown rice

Recipe Ingredients for stuffed peppers

6 red peppers
1 cup brown rice
1 onion
1 zucchini
1/2 eggplant
1 tbsp olive oil
28 oz crushed tomatoes
4 cloves garlic
1 tbsp basil
1 tsp oregano

Recipe Directions for stuffed peppers

  1. Make ratatouille

  2. Make rice

  3. Mix together

  4. Stuff peppers with mix

  5. Bake at 350, uncovered, for 45 minutes
