Recipe Ingredients for Stuffed Peppers

4 green peppers
1/2 cup cheddar cheese
1/2 cup brown rice
1/4 cup onion, chopped
15 oz diced tomatoes with green chiles
1 tbsp olive oil
1 tbsp worchestershire sauce
2 cloves garlic, chopped
1 can tomato soup

Recipe Directions for Stuffed Peppers

  1. Preheat oven to 350 degrees

  2. Cut tops off of and de-seed green peppers

  3. Boil peppers in salted water for 5 minutes

  4. While peppers are boiling, heat olive oil in pan

  5. Saute onions and garlic in olive oil until onion is soft

  6. Add diced tomatoes, worchestershire, and rice

  7. Heat mixture to boiling

  8. Reduce heat, cover, and simmer for 15 minutes

  9. Remove peppers from boiling water, drain, and place in baking dish

  10. Remove rice and tomato mixture from heat

  11. Stir in cheddar cheese

  12. Stuff peppers with mixture

  13. Pour tomato soup into bowl and add enough water to make the soup into gravy consistency

  14. Pour soup over peppers

  15. Bake 20-25 minutes until cheese is melted
