peppers w/r-a-roni whole grains chicken and spanish rice, 1 each

Recipe Ingredients for stuffed peppers

5 green peppers
5 oz. brown rice
1/2 onion, diced
1 lb. lean ground beef
16 oz. tomatoes, diced
1 egg
1 tbsp. olive oil
22 oz. tomato soup

Recipe Directions for stuffed peppers

cook rice. cook beef w/onions. add 1/2 can tomatoes , mix together and stuff into peppers. mix soup and remaining tomatoes and pour over all. bake at 350 for 35 min covered, then remove foil for another 20 min. parboil peppers for about 3 min. first.
