A version of fiesta stuffed peppers using up what I had in the fridge...

Recipe Ingredients for Stuffed Peppers

5 red peppers (or green)
680 g lean ground beef (1.5 pounds)
169 g tomato
104 g canned black beans
100 g canned corn
1 1/4 cup tomato sauce
1 tsp salt
1/2 tsp garlic powder
1/2 tbsp chili powder
1 tsp cumin
1 cup cooked white rice
45 g light cheddar cheese

Recipe Directions for Stuffed Peppers

  1. Preheat oven to 350 degrees F. Lightly grease a medium baking dish.

  2. In a bowl, mix the cooked rice, beef, eggs, and remaining ingredients. Stuff pepper haves with equal amounts of the rice mixture. Arrange pepper halves in the baking dish.

  3. Bake uncovered 1 hour in the preheated oven, until the peppers are soft and the filling has reached a minimum temperature of 160 degrees.

  4. Top with grated cheese in last ten minutes if desired.
