Recipe Ingredients for Stuffed Peppers

2 cup Water
1 cup Brown Rice, uncooked
3 large Green Bell Peppers, halved and seeded
1 tbsp. olive oil, extra virgin
1 lb. Ground turkey
1 Onion, diced
1/2 Red pepper, diced
1 tsp. Oregano
1 tsp. Chili Powder
1 Salt and pepper to taste
2 cloves garlic, diced
15 oz. tomatoes, canned, diced
15 oz. tomato sauce, canned
2 cup Shredded Mozzarella, low-fat

Recipe Directions for Stuffed Peppers

  1. In medium saucepan, bring the water to a boil, add rice and stir.

  2. Cover and simmer for 20 mins.

  3. Preheat oven to 400 degrees.

  4. Arrange peppers in a large baking dish drizzled in olive oil.

  5. In a large saucepan over medium heat, brown the ground turkey drain. Return to heat and mix in onion, red pepper, cooked

  6. rice, garlic, chili powder, oregano, salt and pepper, tomato sauce and

  7. diced tomatos and mix thoroughly. Let simmer for 10 minutes. Remove

  8. from heat.

  9. Spoon the meat mixture onto each half of the green peppers. Bake in

  10. the preheated oven for 25 minutes covered, uncover and bake for

  11. another 15 minutes.

  12. Sprinkle mozzarella cheese over the top of each stuffed pepper. Return

  13. to the oven and bake until the cheese lis lightly browned, about 5 to

  14. 10 minutes.
