Red peppers stuffed with beef mince and rice

Recipe Ingredients for Stuffed peppers

4 red peppers
1 onion, chopped
200 g beef mince
400 g chopped tomatoes
250 g basmati rice
30 g cheddar cheese
2 tbsp vegetable oil

Recipe Directions for Stuffed peppers

  1. Preheat oven to 200C/Gas 6. Halve the peppers, remove seeds and brush a little oil over each half. Cook for 10 minutes. Meanwhile, heat the remaining oil in a pan. Fry the onion and mince for 5 minutes until the mince browns. Add tomatoes, rice and rice, stir and bring to the boil.

  2. Spoon into peppers, grate and scatter on cheese and return to the oven for 15 minutes.
