Poblano Peppers stuffed with veggies and meat

Recipe Ingredients for Stuffed Peppers

1/4 lb ground sausage
7 ounces ground turkey
1/2 onion
4 cloves garlic
1/8 cup black olives
1 1/2 lbs spaghetti squash
2 tbsp sour cream
1 tbsp ricotta
3 oz shitake mushrooms
1/2 cup mozzarella
6 poblano peppers

Recipe Directions for Stuffed Peppers

  1. Cook spaghetti squash. Add contents to a bowl.

  2. Brown sausage and turkey, add onions and garlic. Add to the bowl.

  3. Add remaining ingredients except cheese and peppers. Mix thoroughly.

  4. Cut peppers in half and clean. Stuff peppers with mixture in bowl. Bake. Top with cheese.
