Stuffed Peppers Recipe

Modify recipe to make it more of a Mexican style dish. Substitute salsa for tomato sauce, eliminate almonds, and change seasonings to chili powder, chipolte, etc.

Recipe Ingredients for Stuffed Peppers

2 tsp. rosemary leaves, finely crushed
1 tsp. cinnamon, ground
1 tsp. oregano
1 lb. ground buffalo
14 oz. tomato sauce, no salt
1/4 cup toasted slivered almonds
1 cup brown rice, cooked
1 egg, beaten
4 medium bell peppers, halved

Recipe Directions for Stuffed Peppers

  1. Preheat oven to 375. Mix seasonings in a small bowl. Cook buffalo meat, add seasonings, and stir.

  2. Stir in tomato sauce, almonds, bring to a boil. Remove from heat. Add rice and egg. Mix well.

  3. Dish filling into pepper halves. Pour 1/4 cup water into dish and cover with foil.

  4. Bake 45 minutes. Bake uncovered 12-15 minutes.
