You can use whatever color pepper you prefer.

Recipe Ingredients for Stuffed Peppers

1 pound ground turkey
6 bell peppers, green or red
1 tablespoon olive oil
3/4 cup onion, chopped
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1/8 teaspoon thyme
1/8 teaspoon oregano
16 ounces tomatoes, canned
10 1/2 ounces cream of mushroom soup, low sodium
1 cup brown rice, precooked

Recipe Directions for Stuffed Peppers

  1. Blanch peppers before stuffing. (Stick in boiling water for 2 minutes.)

  2. Prepare brown rice.

  3. Preheat oven to 350F.

  4. Brown turkey in olive oil.

  5. Add onions and cook until tender.

  6. Stir in remaining ingredients and bring to a boil.

  7. reduce heat and simmer for 5 minutes, stirring occasionally.

  8. Spoon mixture into peppers.

  9. Bake for 45 minutes.
