Green pepper halves stuffed with beef and rice.

Recipe Ingredients for Stuffed Peppers

2 lb green bell pepper (4 large), seeded and halved
2 1/4 lb lean ground beef, 90/10
1 large onion, coarsely chopped
2 tsp black pepper
1 1/2 tsp kosher salt
3 cups white rice, parboiled
45 oz tomato sauce

Recipe Directions for Stuffed Peppers

  1. Pre-heat oven to 350.

  2. Cut out stems, membranes and deseed peppers. Cut in half lengthwise.

  3. Mix ground beef, chopped onions, pepper, salt and rice together in a bowl.

  4. Stuff each pepper half with the beef mixture. Do not crush down...leave room for the rice to expand. Roll any extra meat into meat balls (which can be cooked along with the stuffed peppers).

  5. Put in baking dish.

  6. Cover with sauce.

  7. Tent dish with aluminum foil.

  8. Put in oven. Bake 90 minutes, checking occasionally and basting if necessary.
