Stuffed Peppers with brown rice and ground turkey

Recipe Ingredients for Stuffed Peppers

1 lb. ground turkey, 96% lean, cooked
6 cups brown rice, cooked
1 medium onion, chopped
1 medium green pepper, chopped
4 medium green peppers, whole
30 oz. tomato sauce
1 salt and pepper to taste

Recipe Directions for Stuffed Peppers

  1. Cook rice as directed in a medium sized pot

  2. Chop pepper and onion

  3. In a saucepan, brown turkey and add onions and peppers; salt and pepper to taste

  4. Stir in tomato sauce and simmer covered

  5. Slowly add in prepared rice to saucepan, cover and simmer on low

  6. Preheat the oven to 350 degrees

  7. Remove the tops of the green peppers and fill with rice mixture

  8. Place filled peppers in a Pyrex or deep pan and fill bottom of pan with water, about 1/2 inch.

  9. Cover with foil and bake for 30 minutes.
