Bell peppers stuffed with ground turkey

Recipe Ingredients for Stuffed Peppers

6 Bell peppers, red
1 lb ground turkey, lean
1/2 cup brown rice, unclooked
1 onion, medium, chopped
1 tsp oregano
2 1/2 cups Clam and Tomato Juice
1/2 cup ketchup, low-sodium

Recipe Directions for Stuffed Peppers

  1. Remove the tops and seeds of the peppers (red, green or yellow). In a bowl, combine the turkey, rice, onion, oregano, 1/2 cup Clam and Tomato Juice, salt and pepper if desired. Place peppers in a baking dish and divide filling between them.

  2. Combine remaining Clam - Tomato Juice and ketchup together and pour over peppers. Cover with foil and bake at 350 for 1 1/2 hours.
