Red & Yellow Bell Peppers stuffed with a mixture of rice, ground turkey, diced tomatoes, chopped onion & garlic.

Recipe Ingredients for Stuffed Peppers

1 small red bell pepper
1 small yellow bell pepper
1/2 lb ground turkey
7 1/4 oz. diced tomatoes
1/2 small yellow onion
2 cloves garlic
1/2 cup white rice

Recipe Directions for Stuffed Peppers

Chop onion and garlic and sauté for a few minutes. Add ground turkey and brown. Mix in diced tomatoes, then rice. While that is cooking cut the peppers length wise and clean out seeds. Stuff peppers with mixture. Add a pinch of fat free shredded cheese and bake at 350 degrees until lightly browned on top.
