Stuffed Peppers Recipe

Delicous, and full of protein and fibre

Recipe Ingredients for Stuffed Peppers

4 medium bell peppers
500 g Lean ground turkey
2 cups Plain tomato sauce
125 g Cooked lentils
1/2 Onion
1 tbsp Garlic Powder
1 tsp Oregano
1 tsp Basil

Recipe Directions for Stuffed Peppers

  1. Preheat oven to 350F

  2. Chop onion, and fry in skillet until soft, add ground turkey and stir until cooked.

  3. While turkey is cooking, clean and prepare the peppers by cutting off the tops to make a little bowl. Empty all seeds and membranes and place in a baking dish. If the peppers tip over, cut the bottoms a little so they stand upright.

  4. When turkey is ready, empty skillet into large bowl, add tomato sauce garlic powder, oregano and basil. Stir in cooked or canned lentils (you can also use 1 cup of cooked rice).

  5. When everything is well blended spoon the mixture into the peppers and pack tightly (not too tightly). Replace the tops.

  6. Cook in oven for one hour at 350F or until peppers are soft. Serve with a tomato and cucumber salad or a whole-grain italian roll.

  7. Can be prepared in advance and frozen for up to three months. Just remove from freezer, thaw and bake as usual.
