Bell pepper stuffed with ground beef, rice, cheese, and tomatoes

Recipe Ingredients for Stuffed Peppers

2 bell peppers, seeded
1 lb. round steak, ground
1 cup long grain rice, cooked
4 oz. light cheddar cheese, grated
16 oz. tomatoes, chopped
1/2 tsp. basil
1/2 tsp. oregano
1 clove garlic, diced
1 large onion, chopped
8 oz. spinach, steamed and chopped
2 oz parmesan cheese
1/2 tsp. salt
4 oz. fresh mozzarella cheese

Recipe Directions for Stuffed Peppers

  1. Brown ground beef with onion and garlic and drain

  2. Add tomatoes, spinach, rice, oregano and basil and simmer while preparing peppers (10-20 Mins)

  3. Cut peppers in half, seed, wash and steam in salted water (5 mins) and drain

  4. Stir parmesan and cheddar cheese into meat and tomatoes and spoon into peppers

  5. Grill or bake 15-25 minutes then top with mozzarella and bake until melted.
