Recipe Ingredients for Stuffed Peppers

3 1/2 oz Brown Rice
4 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
16 oz Laura's 96% Lean Ground Sirloin
1 cup, chopped Onions
1/2 cup Parsley
1 tsp Paprika
1/2 tsp Salt, Table
0.13 tsp Allspice, Ground
5 serving Organic Tomato
1/2 cup Parmesan, Grated Cheese
4 fl oz Wine, Table, Red

Recipe Directions for Stuffed Peppers

  1. Preheat oven to 450 degrees.

  2. Cook rice according to package directions, omitting salt and fat. Set aside.

  3. While rice cooks, cut tops off of bell peppers; reserve tops. Discard seeds and membranes. Place peppers, cut sides down, in an 8 in square baking dish; cover with plastic wrap. Microwave at HIGH 2 minutes or until peppers are crisp-tender. Cool.

  4. Heat a large nonstick skillet over medium high heat. Add beef and next 5 ingredients; cook 4 minutes or until beef is lightly browned, stirring to crumble. Remove from heat. Add rice, 1/2 c pasta sauce, and cheese to beef mixture, stirring to combine.

  5. While beef cooks, combine remaining pasta sauce and wine in a small saucepan; bring to a boil.

  6. Spoon about 3/4 c beef mixture into each pepper. Place peppers in a 2 qt baking dish coated with cooking spray; add wine mixture to dish. Cover with foil.

  7. Bake at 450 degrees for 20 minutes. Uncover; bake an additional 5 minutes or unitl lightly browned. Serve peppers with sauce. Garnish with pepper tops.
